2 tablespoons semolina (sooji)

How to Make Perfect Namak Para
1. Prepare the dough
In a mixing bowl, combine maida, sooji, ajwain and salt.
Add the ghee and rub it into the flour using your fingertips until the mixture looks crumbly.
This step is essential for a flaky texture.
Gradually add water and knead into a firm, tight dough. It should not be soft like a roti dough.
2. Rest the dough
Cover the dough with a cloth and let it rest for 10–12 minutes.
This helps the gluten relax and makes rolling easier.
3. Roll and cut
Divide the dough into two portions.
Roll each portion into a medium-thick roti—not too thin, not too thick.
Use a knife or pizza cutter to slice into diamond, square or strip shapes.
4. Fry to perfection
Heat oil on medium flame.
Once the oil is moderately hot, slide in the namak para and fry on low–medium flame until they turn crisp and golden.
Frying them slowly ensures they cook evenly and stay crunchy for longer.
5. Cool and store
Remove them onto a tissue-lined plate.
Let them cool completely before storing in an airtight container.
They stay fresh for up to 2 weeks.
