Mango Cheesecake

Mango Cheesecake is a wonderful refreshing summer dessert during the mango season. Made using cream cheese, mango puree, crispy biscuits and mango pieces, this delectable mango cheesecake is amazing to taste. Do try it this summer.

Ingredients
Biscuit base
1½ cup biscuits
½ cup butter melted

Cheesecake
1 cup cream cheese
3/4 cup sugar
1 cup mango purée
2 ½ tsp gelatine
½ cup water
1 cup heavy cream

Mango curd
1 cup mango puree
1/2 cup sugar
1 ½ tsp gelatin
1/2 cup water

Instructions
-In a mixer add biscuits and blend until finely ground.
-Transfer  to a
bowl, add the melted butter and mix well until all the crumbs are nicely coated.
-Transfer the mixture to a  pan. Spread the mixture evenly and gently
press to form a smooth even surface.
- Refrigerate for 30 minutes.
-In a small bowl take cold water and add gelatine powder. Mix it well and let it sit for 10 minutes.
-In a separate bowl, combine  cream cheese, sugar, mango puree and vanilla extract. Beat using an electric mixer.
-Heat the gelatine mixture  in the microwave until it is melted. Let it cool.Mix well.
-To the mango cream cheese mixture, add the cooled gelatine and heavy cream. Mix this well until smooth.
-Pour the filling over the biscuit crust and let it set in the refrigerator for 4-5 hrs.
-Take a pan and make mango curd, by adding the mango puree and sugar and cook till sugar melts. Add the gelatin in water and add to the curd and cook till the curd thickens.
- Cool a bit and pour it over the mango cheesecake.
- Decorate with mango slices, chill and enjoy.
