Mushroom Quiche
Mushroom Quiche is a cheesy savory dish which is rich in protein.
Made using mushroom spinach and cheese, this quiche is baked on a wholewheat crust and is perfect for an evening meal combined with a hot soup.
Recipe
Crust
Wholewheat flour- 1/2 cup
Butter- 3 tbsp
Salt-1/2 tsp
Water
Filling
Mushroons-20 cut into half
Onions-3 chopped
Butter- 2 tbsp
Spinach-1/2 cup chopped
Garlic-1tbsp
Salt- as per taste
Eggs-3
Thick cream- 1 cup
Pepper powder-1 tsp
Cornflour-2 tbsp
Grated cheese- 11/2 cup
Preparation
1. Take flour, salt and butter and mix. Add little water and knead into a hard dough. Cover and keep in fridge for an hour.
2. In pan add 1 tbsp butter, add garlic and onions and saute till they turn golden brown.
3. Add half of mushrooms, spinach and little salt and saute till mushrooms are cooked and mixture is dry. Remove and keep aside.
4. Add butter in same pan and saute the left over mushrooms till water is released and they are dry.
5. Remove the dough from fridge and roll into a circle. Roll it over the tart pan, allowing edges to hang. Give finishing touches by pressing from all sides and removing extra dough from the edges.
6. Prick it with a fork. Put a parchment paper and add few peanuts over it. Bake it in a preheated oven for 15 mins.
7. Meanwhile take a bowl and beat eggs. Add cream and beat again.
8. Add salt, pepper, cornflour and beat again.
9. Take out the tart from the pan.
10. Remove the paper and peanuts.
12. Add a layer of grated cheese over the crust.
13. Now add the spinach and mushroom mixture.
14. Pour the egg mixture over it.
15. Add the sauted mushrooms over it and top it with grated cheese.
16. Bake it in the oven for 30-40 mins or till the quiche is cooked well.
17. Enjoy it with a cup of hot soup.
