Bajre ke atte ke ladoo
Millet flour or bajre ke atte ke ladoo is a delicious Rajasthani sweet made using Millet flour, jaggery, ghee and dry fruits.
Rich in iron, calcium and fibre this dessert is perfect for winters.
Bajra or millet flour is rich in calcium which keeps the heart healthy.It has potassium which dilates blood vessels hence helps reduce overall blood pressure.
Jaggery also has many health benefits. It is packed with calcium,magnesium,iron, potassium and phosphorous.It gives warmth to body hence is ideal to consume during winters.
Today I'm sharing a recipe of this nutritious millet flour laddos with you which is easy to make and is extremely healthy.
To make Millet flour laddoos we need Millet flour or bajre ka atta, edible gum or Gond, jaggery or gud, clarified butter or desi ghee and dry fruits.
How to make millet flour ladoo-
To start with,Add ghee in a pan and heat it till it melts.
When ghee is hot, add edible gum or gond to it and roast it.The ghee should be very hot.
Now reduce the flame and roast the edible gum on slow flame.
Keep stirring. It will swell and increase in size. To check if edible gum is cooked , take a small piece it should break with hands. Remove from flame.
Now add the left over ghee and melt it.
Add the Millet flour or bajre ka atta and roast it on slow flame by stirring frequently.
While cooking if you feel the atta is too dry, add a tbsp of ghee to it and cook.The colour of the flour will change and a nice fragrance of flour will come. It will also start leaving ghee. Your atta is cooked. Remove and keep aside.
The jaggery will melt in some time. Remove from flame and keep aside.
Take the cooked millet flour and add the fried edible gum ,all dry fruits, grated coconut and cardamom powder.
Take a spoonful of this mixture and form into lodoos. Make lodoos from entire mixture.

Ingredients
Millet flour or bajre ka atta- 1.5 cup
Jaggery- 1 cup
Ghee- 1 cup
Edible gum or gond- 2 tbsp
Almonds chopped- 10
Cashew nuts chopped-10
Dry coconut grated- 2 tbsp
Elaichi powder- 1/4 tsp
PREPARATION
1. Add half cup ghee in a pan and heat it.When ghee is hot, add edible gum to it and roast it.
2. Roast the edible gum on slow flame. It will swell and increase in size. When cooked will it will break with hands.
3. Remove from flame and keep aside.
4. Add rest of the ghee to pan and roast the Millet flour for approx 15 minutes till it's colour changes as and it starts to leave ghee. If you feel your flour is little dry, add a tsp more ghee to it.
5. Remove from flame and put it in bowl.
6. Chop the jaggery into small pieces and melt in in a pan on slow flame. Keep aside.
7. Take the bowl of roasted Millet flour. Add edible gum, chopped almonds, chopped cashews, cardamom powder, grated coconut and jaggery syrup.
8. Mix the mixture well with spoon and later with hands.
9. Take a spoonful of mixture when it is still hot and form it into laddoos.
10. Make laddoos from the entire mixture.
11. Store the laddoos in an airtight container.
12. The laddoos lasts for 2-3 months.
