 Rice pudding with dry fruit compote

This Rice pudding with dry fruit compote is an ultimate sweet to relish after meals. Here the roasted dry fruits are cooked in date and jaggery syrup till they turn golden brown. Rice pudding is topped with this compote giving it a rich taste and excellent flavour.

Ingredients
Milk- 1 lts
Rice- 3 tablespoons
Cardamom - 2
Sugar - 4 tablespoons
Jaggery powder- 2 tablespoon
Dates- 4 chopped
Almond chopped- 1/2 cup
Cashew nuts chopped - 1/2 cup
Raisins- 1/2 cup
Water- 1 cup

Preparation-
1. Pour milk and rice in a deep bottom pan and cook.
2. Add sugar and cardamom powder and cook till rice is fully cooked and mixture is thick. Let it cool.
3. Heat pan and dry roast almonds and cashews.Add dates and cashew and mix.
4. Add jaggery powder and water to the dry fruit mix and cook till a thick syrup is formed.Let the compote cool.
5. Pour the rice pudding in a glass. Top it with a spoonful of compote and serve chilled.
