Gond ke ladoo
Gond Ladoo is a rich, delicious and popular north Indian sweet prepared during winters. Made using gond or edible gum, wholewheat flour, dry fruits and ghee these laddoos are a perfect scrumptious treat to be enjoyed in this weather.
Makes- 20 laddoos

Ingredients
Gond or edible gum- 125 gms
Sugar- 500 gms
Wholewheat flour- 625 gms
Ghee- 500 gms
Dry coconut- half ( chopped )
Almonds- 1/4 cup
Cashew nuts- 1/4 cup
Black pepper- 1/2 tsp
Green cardamom powder- 1/2 tsp
Preparation-
1. Heat 1 tbsp ghee in a kadhai. When it melts,add almonds and stir fry till colour changes. Remove and keep aside.
2. Add cashew nuts in the same kadhai and stir fry it till colour changes. Remove and keep aside.
3. Add more ghee in the kadhai and add a piece of Gond, if it puffs and comes up ,your ghee is fine else heat it little more.
4. Add Gond in two batches and stir fry till all of them puff up. Keep aside.
5. Remove ghee from kadhai and dry roast the wholewheat flour by stirring frequently till it turns to golden brown.
6. Meanwhile when flour is getting roasted,grind sugar to a fine powder and keep aside.
6. Add almonds, cashews and Gond in a grinder and grind them to a coarse powder.
7. You can also chop the dry fruits if you want.
8. Remove the roasted flour from kadhai and add it to a heavy bottom pan. Add cardamom powder, black pepper powder, powdered sugar, chopped dry coconut, dry fruits and gond . Mix everything well.
9. Heat the leftover ghee till it melts and add to the flour mixture.
10. Mix everything properly.
11. When the ladoo mixture is semi hot, take a spoonful of mixture in your hands and shape them into balls.
12. Make laddoos of the entire mixture.
13. Store them in an airtight container.
14. These laddoos last for a couple of months.
15. Serve laddoos with a hot glass of milk.
16. The recipe can also be doubled.
