Pumpkin cake
This soft, moist pumpkin cake is extremely healthy and absolutely delicious. If you aren't a pumpkin fan, you will be after having it. Made using whole wheat flour and fresh pumpkin puree and topped with cream cheese and pumpkin seeds this is a must eat dessert.
Recipe
Wholewheat flour- 1 cup
Sugar - 1/2 cup
Pumpkin puree- 1 cup
Spices( nutmeg, cinnamon, pumpkin spice)- 1 tsp
Oil- 1/2 cup
Baking powder- 1 tsp
Baking soda- 1/4 tsp
Eggs- 3
Salt- 1/2 tsp
Topping
Whipped cream- 2 tbsp
Pumpkin seeds-1 tbsp
Preparation
1. Beat eggs till soft and fluffy.
2. Add sugar and oil and beat again.
3. Add spices and pumpkin puree and beat again.
4.Mix all the dry ingredients together.
5. Add the dry ingredients to the egg mixture and fold gently.
6. Pour in the baking mould and bake at 180deg for 45 min.
7. Let the cake cool down.
8 Decorate the cake with cream and pumpkin seeds.
