PEANUT CHIKKI
Peanut chikki is an Indian traditional sweet candy consumed during winters. It is made with two ingredients, jaggery and peanuts.
It can also be prepared using sugar but I will be sharing the recipe having jaggery.
Here the jaggery needs to be cooked till hard ball stage so that the resulting chikki is crisp instead of chewy and soft.
RECIPE
INGREDIENTS
1 cup peanuts
1 cup jaggery
1 tbsp ghee
1 tsp water
Preparation
1.Roast the peanuts in a pan or kadhai.
2.Keep stirring in between till they are completely roasted.
3. Remove them in a separate plate or tray. Let them cool down a bit.
4.Rub them between your palms to remove the husks.
5.To get rid of the husks, you can use a winnow or a large tray. Add the peanuts in the sieve and sift. The husks will get sifted easily. Remove the clean peanuts and crush them randomly with the base of a katori. keep aside
6. Grease a plate with ghee and keep aside.
7.Grease the rolling pin as well and keep aside.
8.Heat the same pan or kadhai, keep the flame low. Add ghee.
9.After ghee melts, add jaggery and water and start stirring till jaggery melts.
10.Cook the jaggery syrup stirring frequently.
11.To check the consistency of the syrup,keep a bowl of cold water.
12. Drop a little jaggery syrup into this water.
13.It must form a ball and should be hard. Break it to check.
14. Add the crushed peanuts and mix well.
15.Turn off the flame.
16.Transfer the Chikki to the greased plate and spread it with a spatula.
17. Roll the chikki evenly using the rolling pin.
18. Cut them into square shapes when hot.
19.Cool it completely and then break the chikki into pieces.
