DAL BAATI CHOORMA
Dal- baati- choorma is a famous traditional Rajasthan cuisine. This three in one meal is a perfect treat for the people of Rajasthan. The combination of sweet and savory can steal anyone's heart.

Today I am sharing one of the most famous recipes from the state- Dal Baati choorma. Dal made is not the usual dal, it's Panchmel Dal which is a mixture of five types of lentils. I have used urad dal, chana dal, moong dal, masoor dal and tur dal. It is seasoned with lots of spices and made in ghee.
Baati is a hard whole wheat dough ball which is baked and then flavored with lot of ghee by dipping the baati in ghee.
Choorma which is made by kneading a normal wholewheat dough, the chapatti is made then crushed and mixed with ghee, nuts and sugar.
To eat this three course meal, you crush the bati coarsely, add ghee and dal and then eat it with choorma on the side. It's delicious and I'm sure you can't resist it! Yes there’s lot of ghee in this dish and that’s what makes it so flavourful.
RECIPE
Baati
INGREDIENTS
2 cups wholewheat flour
3 tbsp besan or gram flour
1/4 tsp baking soda
1/2 tsp salt
1/4 cup ghee
Water
PREPARATION
1. To make baati, mix all the dry ingredients.
2. Add ghee and mix. The mixture will look like breadcrumbs.
3. Add water and knead dough.
4. Shape into balls and make cuts in between.
5.Bake the baati at 180 degrees for 35-40 min.
6. Dip the hot baati into melted ghee and take out immediately.Serve hot.
Dal
INGREDIENTS
1 cup mixed dal (equal amount of
urad dal, chana dal, moong dal, masoor dal and tur dal)
1 tbsp ghee
Pinch of hing
1/2 teaspoon cumin seeds
6-7 cloves finely chopped garlic
1 onion finely chopped
2 green chili finely chopped
2 tomatoes finely chopped
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp chilli powder
Salt to taste
4 cups water
Chopped green coriander
PREPARATION
1. Heat pressure cooker. Add ghee or clarified butter.
2. When ghee is hot add hing and cumin seeds.
3. Now add chopped garlic, onion and saute till onion turns pink.
4.Add chopped tomatoes, green chillies and all the spices except gram masala and cook till it starts leaving sides.
5. Add the washes lentils and water and close the lid and cook till done ( 1 whistle on high flame and cook for 15 min on slow flame)
6. Turn off the gas.
7.Open the lid when steam comes out.
8. Now add garam masala and chopped green coriander.
9. Serve hot.
Choorma
INGREDIENTS
3 cups whole wheat flour
1-1/4 cups water
3/4 cup ghee or clarified butter
3/4 cup sugar
1/4 cup chopped dry fruits
PREPARATION
1. Take wholewheat flour and add 2 tsp ghee. Knead to dough using water.
2. Roll into thick chapatties and cook.
3. Break the chapatties when hot into the small pieces and blend in mixer along with sugar.
4. Add melted ghee to the choorma and mix. You can add more ghee according to your taste.
5. Add chopped nuts.
6. Serve hot.
