LAUKI KI BARFI

Barfi is a sweet that is mostly eaten during festivals. It is made by milk solids or thickened milk, ghee and sugar. 

Lauki also known as bottle gourd is a vegetable which is not liked by most kids but this Lauki ki barfi is a way to give them a healthy delight. It has a wonderful colour and delicious taste.

Today I will be sharing lauki ki barfi recipe which is made by thickened milk.
.               Lauki ki barfi

Recipe
Ingredients
2 big Lauki or bottle gourds
2 litres milk
1 cup sugar
1/2 cup ghee
2 cardamoms
dry fruits chopped

Procedure
1. Peel the gourd peel and remove its skin and middle white portion.
2. Grate the bottle gourd. Squeeze it and remove excess water.
3. Take a kadhai or pan and add ghee when it is hot.
4. Add the grated gourd and keep stirring till it becomes soft and dry. Add sugar and cardamom powder. Cook for 10-15 mins. Keep stirring.
5. Remove from flame.
6.In a heavy bottom pan add the milk and cook till it is reduce to half. 
7. Add the cooked gourd and mix.
8. Keep stirring until it is thick and leaves sides(does not stick). Remove from flame
9.Grease a plate or thali.
10. Add the burfi on it and spread it evenly.
11. Add the chopped dry fruits over it and let it set.
12. When the burfi is half set, cut it into squares with a knife and let it set properly.
13.Remove the burfi pieces on a plate when set.
