PUMPKIN KHEER
Pumpkin is a fiber rich vegetable with lots of vitamin A and is fewer in calories. A cup full of mashed pumpkins provide more potassium than banana which is good for muscles and maintaining high blood pressure. This Pumpkin kheer is a yummy kheer made with pumpkins and is flavored with cardamom.
Pumpkin kheer can be made by grating or mashing the pumpkins. I have used the grated pumpkins which gives a grainy texture.

Recipe
Ingredients
2 cups peeled and grated pumpkins
3 cups milk
1tbsp ghee
4-5 tbsp sugar (according to taste)
1/2 tsp cardamom powder
5 chopped cashew nuts
5 chopped almonds
5 chopped raisins
Few rose petals
Procedure
1. Heat ghee in a pan on medium flame.
2. Once it's hot add the grated pumpkins and cook for 7-8 minutes till it becomes soft and shrinks in size.
3.Remove the cooked pumpkins on a plate.
4.Boil the milk in the same pan and then reduce the flame and let it cook for 8-10 min till it thickens. Keep stirring the milk.
5. Add the cooked pumpkins and cook for 2-3 minutes.
6. Now add sugar and keep stirring it for a few more minutes.
7. Add the cardamom powder, almonds, cashew nuts and raisins.
8. Let it cook on slow flame for 2-3 mins till kheer is thickened.
9.Remove from flame.
10. Serve chilled with rose petals and nuts. You may also have it hot.
