POHA

Poha,chiwda or flattened rice are flat, light, dry flakes. Rice is parboiled before flattening and it takes very little time for it to cook. These flakes of rice swell when added to liquid, as they absorb water. 

 Poha or chiwda is  easily digestible and is very popular healthy breakfasts. To make it more nutritious you can add boiled potatoes, finelly chopped carrots,beans and cauliflower. It is also used to prepare snacks.

Poha is  generally cooked with lightly fried mustard seeds, turmeric, green chilli, sliced onions, fried peanuts and peas. Then moistened flattened rice is added to the spicy mix and cooked for a few minutes. Before serving some lemon juice is poured over it along with some coriander leaves.

RECIPE
  • 1 1/2 cup poha
  • 1/2 cup  boiled peas
  • 1/2 cup peanuts
  • 1 onion sliced
  • 1 tsp mustard seeds 
  • 1 green chilli slit
  • 10 curry leaves
  • 1/4 tsp turmeric powder
  • 3/4 tsp salt
  • 2 tsp oil
  • chopped coriander

INSTRUCTIONS

1. Put poha in a stainer and rinse under running water till it is soft. To check, press  a grain  with your finger and if it is crushed easily then its ready to cook. Keep aside

2. Dry roast peanuts in a pan till they become crunchy. Remove from pan and keep aside.

3. In a pan add oil. Add mustard seeds and let them crackle.

4. Now add onions and saute them till it becomes slightly brown.

5. Then add curry leaves, green chilli, turmeric and salt and saute for some time.

6. Add the boiled peas and roasted peanuts and stir.

7. Add the poha and stir again.

8. Let it cook for 2 minutes and remove from flame.

9. Squeeze in juice of one lemon and mix well.

10.  Garnish with coriander leaves and serve hot.
