DOSA

Dosa is a rice pancake, from South India made from a fermented batter. It is  made from rice and black gram ground together in a fine, smooth batter with a dash of salt. Traditionally, dosas are served hot along with sambhar and chutney.

Dosa is one of the the healthiest breakfast as it is fat free, full of protiens and easy to digest.

To make dosa,3 portions of rice and one portion of black gram (urad dal) is soaked in water along with a tsp of fenugreek seeds for 6 hours and ground finely to form a batter. The batter is allowed to ferment overnight, before being mixed with water to get the desired consistency. The batter is added with a ladle onto a hot tava greased with oil . It is spread out with the base of a ladle or bowl to form a thin and crispy pancake. It is served hot, folded either stuffed with potato vegetable or plain.

RECIPE


Ingredients

  • 1 cup black gram (urad dal)
  • 3 cups rice
  • 1 tsp fenugreek seeds


Method


1. Put the black gram (urad dal) in a bowl. Put rice and fenugreek seeds in another bowl and cover by at least two inches of water. Set aside to soak at least six hours or overnight
2. Drain the black gram and rice and grind them in a blender, adding just enough water to get a smooth thick batter. Put the batter into a large bowl.
3. Mix it alone with 1 tbsp salt.
4.Cover the bowl. Your bowl should be large enough that the batter reaches only half way up because the batter will rise. 
5. Place the bowl in a warm place and let it stay overnight to become puffy and rise.

Making dosa

1. Mix the batter. Add little water to form a pouring consistency.
2. Grease the dosa tava with oil. Put the batter with a ladle when tava is hot.
3.Spread the batter with the base of the ladle to form a thin crispy dosa.
4.Cook till it turns golden brown.
5. Fold the dosa and serve hot with sambhar and chutney.
